would anything happen to precipitated protein if it is left in acetone solution and stored in a freezer for a few days? meaning, what effect would acetone have on the precipitated protein?

nothing should happen (your yield may be a little bit better).

i've crystallized proteins from acetone and left them to crystallize for days with no ill effect.
