hey, can you send me by pm some references? all bordeaux wines are a mix between cepages (is it correct in eglish/american? )
i have in my stock wine from hile and from malta that i keep for again 3-4 years.
Beer is more fun : no need to stock it for long years. but both are ok.
if some one is interested : i made a planteur (called the majority oftime "punch" ) that was very good...
general red and rose wine is derived from red grapes, white wine from white grapes.
The main difference between red and white wine is the fermentation process. Red grapes (including skin etc...) are fermented in the mash giving red wine a special aroma.
Fermentation without mash will give you rose wine.
Fermentation without mash and with white grapes will give you.........well........,.....,white wine .

As Redwalar said it is definitely possible to make white wine with Red grapes, since most of the pigments come from the skin. It's just how long the skin is in contact with the the juice after the grape was in the press. White wine is filtered immediatly, rose stand a few ours and red can keep the skins up to few days.
An example, among the Champagne you will find "blanc de blancs" (white [wine] from white [grapes]) and "blanc de noirs" (white [wine] from red [grapes]) and the regular wich is a mix of wine from both white and red grapes.
And for Fred, have you tried the canadian Icewine? They are not worth some Sauternes (I am french too ) but some are really good, and considering the price of imported wine, I'd rather go local
