If I accidentally add double of the APS I'm supposed to add to my acrylamide gels, should I be worried that I will cause an 8% gel to have more crosslinking than it should?

I don't think you have to worry about that.

I'm agree with Theo22.
Do not worry.
Sometimes I add a bit much in my acrilamide gels, and I do not find so much differences with "normal" APS gels

It will simply go faster. If you add too much temed or APS, be ready to pour quickly. Really quickly.
