Who has experience with haemagglutionation?

Is it normal that the result in haemagglutination depends rather on the total protein concentration than on actual antibody content?

The agglutination should be due to the titer of the ab. You should run serial dilutions of your stock(s) ab with your ag sensitized rbcs.
