tween 40 = 20x2? - (Jul/16/2007 )

I know it's a stupid question but, is it okay to replace tween 40 in a receipe with twice as much tween 20?

TW40 and TW20 differ in the chain length by one -CH2- per chain. There are three fatty chains per molecule . Most likely, you need to use a same quatity of TW40 to substitute TW20, not twice.

by the way, what is the composition of Tween in general...! fatty acids only?!

tween solution is 100% of POLYOXYETHYLENE-20-SORBITAN MONOLAURATE
so it's a oily solution.
