how is humidity controlled in an incubator? do most use humidity pans? are these special pans or can any container work for the water?

All the ones I have used (about 5 brands) use pans which need to be topped up with water, there is no strict regulation of humidity. You should use a pan with a large surface area, and one that conducts so that the heat from the walls/floor of the incubator can be transmitted into the pan and evaporate the water.
